There are lentils, soya beans, kidney beans, mung beans, haricot beans(these ones end up in the can), black eye beans, aduki beans, pinto beans, green peas and tasty chickpeas. Kidney beans and chickpeas can be got in cans and go well in stews. You know all about peas. The rest require overnight soaking and can be got in health food shops such as Nancy's on Thomas St. To take full advantage of all that pulses have to offer you can make beansprouts out of them. This is known as germination. All you need is a big jar.
